My go to grilled chicken is fast, easy, and SOOOO delicious. Seriously!
I’m the one who grilles at our house. Matt will totally join me on the patio furniture for the beer drinking, waiting for the food to cook part, but I’m the one with the grill tongs in hand. He’s more of an observer. But whoever does the cooking, this chicken recipe is a crowd pleaser, everyone loves it. I have a friend who does it very similar but adds sugar to the marinade, but I’m going to be honest, I don’t see the point.
All you need is 30 minutes to marinade. Equal parts Soy sauce, Worcestershire, and Balsamic Vinegar. That’s it!
It’s the perfect recipe for a nice Spring or Summer day. Of course I can hear my kids now saying “all you cook is chicken”. Do all kids say that? They just want burgers and pizza every night. But I NEVER grow tired of this chicken, and everyone in the family actually loves it, making it one of the rare one hit wonders.
You start by getting your chicken marinating while you throw some corn or potatoes on the grill to cook. Then you sit outside and enjoy a glass of wine or a great craft beer for half an hour. This is how I like to do it anyway. Sometimes the beauty of the meal is in the preparation…
I usually throw on a green vegetable too and a good crusty bread, but I’ll leave that up to you. Either way, the chicken only needs 10 minutes or so over medium heat, flipping halfway through of course, and what you’ve got is some YUMMY, Juicy chicken.
Once the chicken comes off of the grill toss on your apples. You will want to have prepared them ahead of time, and they can cook while you eat. It’s just as easy as the chicken.
Just like the chicken, you want equal parts of three ingredients: sugar, cinnamon, and butter.
I usually quarter and core my apples and apply the sugar, cinnamon, butter mixture generously to each quarter. I piece and apple back together and foil it up, so it looks like a whole apple wrapped in foil. Then I toss those on the grill over medium heat for 20 minutes or so while we eat. When we are done with dinner we have soft, warm, sweet, and delicious cinnamon apples for dessert.
